Humble Beginnings
Founded in 1982… our goal was to bring the Traditional Philly Cheesesteak to the Midwest. Our first event was the Wyandotte Street Art Fair which we started in a tent.
Geoffries Cheesesteaks
We were Geoffries Cheesesteaks until sometime around 2005. We tried to register the name we had used for 23 years and were unsuccessful… that was the beginning of the CIA Cheesesteak Institute of America.
Cheesesteak Institute of America
From 2005 on we have been the CIA Cheesesteak Institute of America. The only change from our 1982 beginnings has been the addition of our Waffle Fries which have become a guest favorite.
